Spas - Armenian yogurt soup (Tanapoor)

"We’ll have the Spas" - is what we frequently hear when our tourists go out for lunch in Armenia. This creamy and tart soup is very budget-friendly, and it is made using simple ingredients, that most people have in their fridge and pantry.

Spas, or Tanapoor ("Tanapoor" is translated from Armenian as the soup from Tan, a traditional fermented yogurt drink) - is a soup from the classic Armenian cuisine, and it's made with yogurt (matsun) and wheat berries, often seasoned with mint or cilantro. Some use parsley, others use cilantro. Most also incorporate mint. Egg, egg yolk or wheat is necessary if the soup is going to be served hot - it keeps the yogurt from curdling.

This yogurt soup is very smooth and comforting. The chewy wheat berries provide an interesting texture and make the soup more filling.

Spas is perfect belly warmer for a cold day, and many enjoyed chilled spas at the height of Armenian summer, when the cool yogurt and refreshing mint are the perfect pairing for hot, dry days.

As with most traditional recipes, every family has their own way of cooking Spas - sometimes a green leaf vegetable such as spinach is added, and when hot it can even be served with meatballs.
