Arishta - Traditional Armenian Homestyle Pasta

Arishta is traditional Armenian homestyle pasta similar to Italian Fettuccini. Pretty steep wheat flour dough is rolled out up to 1.5 mm thick, like the Lavash bread, rolled up, which is then cut into thin strips with a special rolling pin and dried. Then the dried Arishta is browned in a dry frying pan to a pinkish-golden hue.

The classic Arishta is served with the gravy of yogurt (arm. matsun), clarified butter and garlic, but the cheese, mushrooms, spinach, corn, bulgur, sautéed onions, spices and herbs also go well with this flavorful pasta. The eggless version of Arishta is also used as a lean dish.
