Lake Sevan Crayfish Kebab: An Armenian Delicacy

The blue crayfish found in Lake Sevan and surrounding rivers is absolutely delicious. Sevan is the largest lake in the Caucasus and one of the largest freshwater high-altitude lakes in the world.

About 10 kg (about 22 lbs) of wild blue Sevan crayfish are used for 1 kg of minced meat. The meat is squeezed out of crayfish tail, dried up a bit, then minced through a meat grinder. The meat is somewhat similar to lobster, but much delicate.
In order to make the minced meat fatter and juicier, about 100 grams of lard or butter are added to 1 kg of minced meat, in addition to salt and pepper. After preparing the minced meat, it is sent to the refrigerator - to cool down. If the minced meat is not cold enough, it will fall off the skewer during grilling.
Cold minced meat then is strung on a skewer and placed on the mangal to grill for 7-10 minutes. Served with local beer, ketchup, sour cream, flatbread Lavash, potatoes, chopped onions and fresh herbs. The Crayfish Kebab is not only a very tasty and juicy dish, but it is also rich in phosphorus, iron and many other essential minerals.
